This dish is not only delicious and filling for the kids but quick and easy to make to.
A meal that includes your 5 a day in one dish with protein of your choice (this dish includes prawns).
Ingredients.
Olive oil
Prawns
Onions 1/2
Cherry tomatoes
Courgettes
Green beans
Fresh spinach
Coriander
Twirl pasta or pasta of your choice.
Red pesto sauce / Thick tomato pasta sauce.
Instructions
Boil some water in a pan with chicken stock & olive oil, cover and boil for 6 mins before adding pasta.
Trim and wash green beans, cut in half and boil in a pan until ready. Set aside till later.
Heat oil in frying pan, add onions and fry till soft.
Add wash prawns with sliced courgettes and cherry Tomatos and fry for 10 min with seasoning
Add red pesto sauce or Thick Pasta sauce with green beans and coriander then leave to simmer for 10mins.
Add already cooked pasta and fresh spinach and leave to dinner steam for 5 mins until spinach if soft.
Mix well together and enjoy with sides of your choice. I serve with some Cucumber, broccoli and chicken sausages for some extra protein.
